What if my interest is niche?
Post it anyway with the specifics — bouldering at a particular gym, birding in Ballona, a chess night, a language exchange. Niche posts get fewer requests but far better ones, because only people who actually want that will ask.
Do I have to commit to something recurring?
No. Every plan is a single occasion. If it goes well you arrange the next one directly; if it doesn't, nothing is owed and nothing recurs.
